Crock pot beef stew is a fall staple in my house! It’s so easy to put together, and it’s delicious and cozy. With plenty of vegetables and beef, this soup is nourishing as well as tasty. I love curling up on the couch with my favorite fall tv series and a bowl of fresh hot stew.
Beef stew is something I have truly loved for years. I grew up enjoying the crock pot stew my mom made for us, and as an adult I enjoy making my own version. Truthfully, I don’t always follow a recipe. When I’m making something like this, I usually just measure with my heart. I make use of what veggies I have in my pantry and freezer, whether canned or frozen. It’s really hard to mess this up!
This recipe pairs perfectly with my favorite dinner rolls, but my husband enjoyed his with saltine crackers. You can make yours with your favorite fresh sourdough loaf!
Crock Pot Beef Stew: Herbs for Flavor
I flavored this stew with some fresh rosemary and thyme from my herb garden. You can used dried if that’s what you have on hand. I also used the vegetables I had on hand. I had a bag of frozen carrots and cans of potatoes. It doesn’t matter if you opt for canned or frozen veggies – both ways are delicious.
Crock Pot Beef Stew: Easy to Improvise
Again, the great thing about stew is that it’s hard to mess it up. You can improvise and use different spices or opt for fresh vs frozen veggies. You also don’t have to get the proportions of veggies and meat exactly right. The recipe will turn out tasty!
Crock Pot Beef Stew
A nourishing and cozy crock pot meal that's perfect for fall
1lbfrozen sliced carrots (or canned, this is what I had)
2canssliced potatoes (or sub frozen, this is what I had on hand)
32ozbeef broth
1cupfrozen peas
1tbspfresh rosemary (about 1 sprig, or sub dried)
1tbspfresh thyme (you can sub dried)
Salt and pepper to taste
Method
Brown the stew beef on a skillet over medium heat. Cook through and add a bit of salt.
Remove beef from heat and place on cutting board. At this point, I like to cut it into bite sized pieces and then put it in a large crock pot.
Add carrots, potatoes, peas, herbs, and salt and pepper. Pour broth over ingredients.
Cook for 7-8 hours on low or 4-5 hours on high.
Serve with your favorite bread or dinner rolls.
