Crock Pot Beef Stew

A nourishing and cozy crock pot meal that's perfect for fall

Ingredients
  

  • 1 lb stew beef
  • 1 lb frozen sliced carrots (or canned, this is what I had)
  • 2 cans sliced potatoes (or sub frozen, this is what I had on hand)
  • 32 oz beef broth
  • 1 cup frozen peas
  • 1 tbsp fresh rosemary (about 1 sprig, or sub dried)
  • 1 tbsp fresh thyme (you can sub dried)
  • Salt and pepper to taste

Method
 

  1. Brown the stew beef on a skillet over medium heat. Cook through and add a bit of salt.
  2. Remove beef from heat and place on cutting board. At this point, I like to cut it into bite sized pieces and then put it in a large crock pot.
  3. Add carrots, potatoes, peas, herbs, and salt and pepper. Pour broth over ingredients.
  4. Cook for 7-8 hours on low or 4-5 hours on high.
  5. Serve with your favorite bread or dinner rolls.
