In my family, we love to enjoy some delicious barbecue skewers for dinner year-round. During the warmer weather, we often cook skewers on the griddle outside, but this recipe for barbecue pork skewers can be cooked indoors for any season. My wife really enjoys this recipe, and so does my young daughter, Lexi. In fact, the last time I made this recipe she devoured an entire skewer so fast, we thought it disappeared!
Pork Skewers: Cooking with a Stovetop Griddle
I love to cook skewers on my trusty stovetop griddle. Over medium-low heat, I blacken them slowly with plenty of spices and finish them with a brush of barbecue sauce. The end result is tasty, savory, and pairs well with my favorite rice and beans. You could pair yours with whatever you want. It could be freshly tossed side salad, some roasted veggies, or barbeque baked beans.
Sofrito: My Secret Ingredient
One of the ingredients I like to use in a lot of my cooking is sofrito. This is a Hispanic seasoning that is often used for meats. I actually used my own homemade sofrito for this recipe, but you can find yours in the Goya section of your local supermarket. I’ve linked it below in case that helps you!
In addition to the sofrito, I seasoned these skewers with a blend of spices. This includes paprika, garlic powder, onion powder, and Cajun seasoning. We like to use the Wegman’s brand of Cajun seasoning, but any brand will do. These spices lend the perfect flavor to the pork skewers, and then the brush of barbeque sauce really brings everything together for the perfect experience for your taste buds.
Pork Skewers Glazed with Barbeque Sauce
These delicious barbeque pork skewers come out perfectly on your favorite stovetop griddle.
In a mixing bowl, coat pork chops evenly with oil, sofrito, and seasonings.
Spear pork pieces on skewers (I used eight skewers for four pork chops).
Heat a stovetop griddle pan over medium-low heat.
Place skewers on griddle for about 16 minutes total until cooked through, rotating them every four minutes and pressing down with a spatula to ensure even cooking.
Brush with barbeque sauce and serve.
