- Cut pork chops into small, bite-sized pieces.
- In a mixing bowl, coat pork chops evenly with oil, sofrito, and seasonings.
- Spear pork pieces on skewers (I used eight skewers for four pork chops).
- Heat a stovetop griddle pan over medium-low heat.
- Place skewers on griddle for about 16 minutes total until cooked through, rotating them every four minutes and pressing down with a spatula to ensure even cooking.
- Brush with barbeque sauce and serve.
