Strawberry Mocktail Recipe (With Mint and Lemon)

This strawberry mocktail recipe features muddled strawberries and homemade mint simple syrup. If you have a lot of mint in your herb garden, this is a great way to put it to use! The resulting drink is sweet and sour, with the perfect touch of minty flavor. It’s a great drink to enjoy alone, or you can make a few if you’re hosting friends for dinner.

Strawberry Mocktail: Using My Garden Mint

My garden gets pretty much overrun with mint, and it grows back year after year without me replanting it. Every fall, I’m tasked with figuring out how to use up the remaining herbs in my garden.

Mint has always been tricky for me, because I’m never sure how to use it. An obvious use would be mojitos, but I’m not really a fan. This year I started making batches of mint lemonade, which my husband and I really enjoy. 

After enjoying mint lemonade all summer, I was inspired to create my own mocktail based on those flavors. For some additional sweetness, I decided to add muddled strawberries to the mix. This resulting drink is perfect for spring and summer, but if you’re like me, you can enjoy it in the fall when you’re trying to use up your garden mint.

Strawberry Mocktail: Making it Even Sweeter

I don’t enjoy overly sweet drinks, so I only used 2 ounces of mint simple syrup. If you prefer sweet, adding an extra ounce of syrup (and maybe an extra berry or two) will do the trick.

Storing Your Mint Syrup

This mint syrup recipe yields a small batch of syrup, which is more than you need for one drink. You may consider inviting some friends over and making multiple mocktails to use your syrup, if you won’t be able to enjoy it on your own. You can store your leftover syrup in an airtight container for 2-3 weeks in the fridge. You can tell if it’s gone bad if the syrup gets cloudy or develops a bad smell.

Strawberry Mocktail Recipe

This refreshing strawberry mocktail recipe features the flavors of lemon and fresh mint.
Prep Time 5 minutes
Total Time 5 minutes
Servings: 1

Ingredients
  

  • 6 strawberries
  • 4 oz lemon juice, divided (2 lemons)
  • 2 oz mint syrup
  • 3 oz club soda

Method
 

  1. Make mint syrup according to recipe (scroll down for recipe).
  2. Muddle 6 strawberries in cocktail shaker with 1/2 oz of lemon juice.
  3. Combine strawberry mixture, remaining 3 1/2 oz of lemon juice, 2 oz mint syrup, and ice in cocktail shaker. Shake vigorously!
  4. Strain out the ice from the shaker and pour over a fresh glass of ice. Top with club soda and enjoy!

Notes

If you prefer a sweeter beverage, add an extra ounce of mint syrup.

Ingredients
  

  • 1 cup sugar
  • 1 cup water
  • 30 mint leaves (approximately)

Method
 

  1. Place sugar and water in a small sauce pan and bring to boil, about five minutes over medium heat.
  2. Remove from heat and stir until sugar dissolves. Add cleaned mint leaves to the mixture, stir and cover. Allow to sit for 30 minutes.
  3. Refrigerate for up to 2-3 weeks.
