Canned Chicken Salad with Pickles, Almonds, and Cranberries

This easy canned chicken salad recipe is perfect for meal prep, a picnic, or even for enjoying with guests at a party. When I think of chicken salad, I am always reminded of my wedding day.

It was June of 2020, the middle of the pandemic. My husband and I could only have a small gathering outdoors for our wedding. To serve all of the guests that came out, we ordered from Panera. My sandwich of choice was chicken salad. It’s so delicious and satisfying!

Canned Chicken Salad: An Easy Win

I love a good chicken salad recipe, but I don’t like going to the effort of making the chicken. For this reason, I created my chicken salad recipe using canned chicken. It cuts out a step and makes this such a fast and yummy treat to whip up.

The Flavor from Pickles, Cranberries, and Almonds 

In addition to canned chicken, I included cranberries for sweetness and almond slivers for crunch. But the star of the show is the pickles! The recipe calls for both pickles and pickle juice. I was pregnant when I was developing this recipe, so the pickles were a huge craving for me. This chicken salad really hit the spot!

The Best Canned Chicken Salad Recipe

I hope you enjoy this simple recipe as much as I do! While I’ve provided measurements, it’s really hard to mess this up. You can honestly eyeball a lot of this and it will turn out yummy.

Chicken Salad Sandwich

Canned Chicken Salad

This delicious canned chicken salad recipe is quick, easy, and delicious!
Servings: 4

Ingredients
  

  • 1 12.5 oz can of chicken
  • 3 pickle spears
  • 3 tbsp pickle juice
  • 1/2 cup mayonnaise
  • 1/4 cup dried cranberries
  • 1/4 cup almond slivers
  • 1/2 tsp onion powder
  • Salt, to taste
  • Pepper, to taste

Method
 

  1. Open can of chicken and drain excess liquid. Place in mixing bowl and break apart with a fork.
  2. Add all ingredients to the bowl and mix together thoroughly.
  3. Enjoy on crackers, sandwich bread, or even just on a spoon if you are so inclined.

Notes

Chicken salad is hard to mess up! Feel free to add or subtract ingredients you love to suit your taste.
